Companio Ancoats

This project marks the second collaboration between Define Architects and the Artisan Bakery Companio. Having worked together on delivering their Northern Quarter site at Spear Street, Define were asked to reimagine the original space at Radium Street - where it all started for Neil and Baneta back in 2019.
Production moving to the larger Spear Street unit enabled this reconfiguration to focus solely on the sale of goods and customer experience. Key design elements involved moving the point of service counter to face the entrance from Radium Street, providing a range of bespoke joinery for the display of local produce from Companio and their trusted suppliers/producers and additional counter space with bar seating to facilitate an intimate wine and dinner service as part of a new evening offering.

The design is centred around a large existing table, creating a natural circulation around the bakery floor. It leads customers past produce before arriving at the main counter. A gathering point, it encourages patrons to sit together and highlights the concept of community, something Neil and Baneta have built here over the years. Simple moves such as locating the coffee machine to the central counter rather than the perimeter wall allows baristas to interact with customers, instead of having their back to them when preparing hot drinks. The large existing oven is retained in the corner, a love-letter to the early days when all production came from this small site. It can be used for the one-dish menus curated for small-scale dinner services.

Where Spear Street paired warm-toned pale oak with bright-white work surfaces, the materiality here is much darker with rich walnut cabinetry and earthy neutral counter tops. The variation in palettes creates a complimentary yet distinct character between the Companio sites, tied together through the design of the custom-made joinery and unmistakable orange branding.

The unit shell remains largely untouched, existing floor and ceiling treatments playing into the raw aesthetic of the design and wider ethos of the company. Companio stated ‘we’re taste driven, and we are here to be a part of a real food scene in our city’. This set a brief that prioritised the product – artisanal bread, pastry and viennoiserie alongside quality coffee. Displaying baked goods and providing a welcoming space for enjoying them was paramount. 
The evening offering is an exciting new use for the space, requiring the design to be adaptable in fostering a transitional atmosphere from day to night. This is achieved through multi-level, dimmable lighting and moveable joinery pieces on casters for customisable preparation and seating configurations.

Being a ground floor unit surrounded by red brick mill buildings that are quintessentially Ancoats, the space is often cast in shadow. Instead of fighting this the design exploits it, allowing it to assist in creating an intimate and cosy environment where the richness and warmth of materials isn’t compromised and where artificial lighting is used to spotlight produce and points of service for customer convivence. 

"Returning to Companio’s original Radium Street site, we wanted to reference the new Northern Quarter space but equally retain the more intimate atmosphere and rusticity Companio’s Ancoats patrons have long been accustomed to at this smaller unit. The result is a moodier sibling to Spear Street, inspired by Neil and Baneta’s travels - from the clean lines of chic Brooklyn restaurants to expertly crafted, textural materiality found in cafes from Baneta’s home region in Iraq."

Define and Companio share a common passion for sustainability, exemplified in this project through locality. Inspired by Companio’s sourcing of ingredients, where ‘sourdough is made with predominantly British flours…the butter used for Viennoiserie is locally sourced and all eggs used are free range and from a local farm’, the key joinery elements are custom-made by a local carpenter who also happens to be a long-time patron of the bakery. Define’s studio is quite literally a stone’s throw from the site which encompasses the working relationship between localised, independent businesses that this project has enabled.
